Whisk the eggs in a bowl. Add the pumpkin purée, crème fraîche and grated cheese.

Add salt and pepper to taste. Mix well to ensure the mixture is evenly blended.

Pour the mixture into individual moulds or a large gratin dish. Bake at 180°C for 20 to 30 minutes, until the flan is golden brown and firm to the touch.

Serve the flans straight from the oven for a melt-in-the-mouth texture and comforting flavour.
Preparation tips
To prevent your flan from becoming too watery, drain the pumpkin well after cooking (you can squeeze it gently in a clean tea towel).
