Pumpkin flan with cheese

Ingredients

  • -1- Preparing the pumpkin

    Cut the pumpkin into pieces. Boil them in a saucepan of water until tender.

  • -2- Making the purée

    Drain the pumpkin thoroughly. Blend it using your MINIPRO stick blender fitted with its masher attachment until you obtain a smooth, even purée.

  • -3- Preparing the flan mixture

    Whisk the eggs in a bowl. Add the pumpkin purée, crème fraîche and grated cheese.

  • -4- Seasoning

    Add salt and pepper to taste. Mix well to ensure the mixture is evenly blended.

  • -5- Baking

    Pour the mixture into individual moulds or a large gratin dish. Bake at 180°C for 20 to 30 minutes, until the flan is golden brown and firm to the touch.

  • -6- Serving

    Serve the flans straight from the oven for a melt-in-the-mouth texture and comforting flavour.

Preparation tips

To prevent your flan from becoming too watery, drain the pumpkin well after cooking (you can squeeze it gently in a clean tea towel).
