Ingredients

  • -1- Preparing the ingredients

    Pour the chestnuts into a large saucepan. Add the water, sugar, vanilla pod split in half lengthwise, and a pinch of salt.

  • -2- Gentle cooking

    Simmer over a low heat for 30 to 45 minutes, until the chestnuts are tender. The water should reduce slightly to concentrate the flavours.

  • -3- Remove the vanilla

    Remove the vanilla pod using tongs or a spoon. Scrape out the seeds inside the pod and return them to the mixture for even more flavour.

  • -4- Blend the cream

    Pour the hot mixture into the graduated jug. Blend thoroughly with your MINIPRO stick blender until you obtain a perfectly smooth and velvety cream.

    Add a little water if the texture is too thick for your liking.

  • -5- Potting

    Pour the chestnut cream into sterilised jars. Seal them tightly and leave to cool at room temperature before placing them in the fridge.

Serving suggestions

This homemade chestnut cream is delicious for breakfast on crispy toast, as a dessert, as a tart filling or to jazz up plain yoghurt.

Seasonal tip: serve with fresh cheese for an irresistible sweet and savoury contrast as an aperitif!
